In the first season, Arya of House Stark is taught to fence in the Braavosi Water Dancer style by the former First Sword of Braavos Syrio Forel. During that instruction (the scene at this link) Syrio makes this unforgettable declaration:

There is only one god,
and his name is Death.
And there is only one thing we say to death:
“Not today."
